I may be a disaster with cakes, but here is a good recipe.   My sister in law always manages to make me good meringue recipes.

MERINGUE COOKIES

4 egg whites
pinch salt
1 cup sugar
1 TBS cornstarch
1 tsp. vanilla or almond flavoring
1 1/2 tsp. white vinegar
Mini chocolate chips or butterscotch bits
1/2 cup chopped walnuts or any other kind of nuts

Preheat oven to 400.  Line cookie sheet with parchment paper.

Beat egg whites and salt until frothy and slight peaks form.  Slowly add the sugar and keep beating on high until whites are stiff and glossy.  Fold in cornstarch, vanilla and white vinegar until well blended.  Fold in chocolate bits and walnuts.

Spoon onto cookie sheets (about 1 1/2 to 2 inches around)

Turn oven temperature down to 300 and bake for about 1 hour or until light tan.  (careful, the bottoms can burn, so watch closely...mine took 50 minutes)   Shut off oven and cook cookies in oven.
