Dear Gluten-Free Bakers,

Happy June!

The test kitchen at Gluten-Free Baking and More has been busy! Take a look
at some of the great recipes we have been creating for you.

In the June Issue of Gluten-Free Baking and More:

*Oreo-style Cookies. Really, what do I need to say about "Oreo" cookies? Our
recipe is just like the "real thing" and incredibly easy to make. Soon you
will be licking the filling our of your favorite cookie once again.

*Refrigerator Cookie Log. You know this dessert, right? Take some whipped
cream, our Oreo-style cookies and create a log. This dessert is great for
summer parties. Plus, you won't believe the variations we have created.

*Three Seed Bread. If you are looking for a bread with a more girth than
sandwich bread, this recipe is for you. Flax seeds, pumpkin seeds and
sunflower seeds are combined to make a hearty, delicious loaf of bread. (I
love this bread lightly toasted and spread with peanut butter.)

*Lemon Cookies. Remember those lemony cookies you ate as a kid that left a
powdered sugar mustache on your lip? We have made this favorite cookie
gluten-free. It is a real hit with kids of all ages.

*Brown Sugar Cupcakes. Everybody loves cupcakes. These simple cupcakes don't
even require icing, making them perfect for a day at the beach of a family
picnic. (For those of you with a real sweet tooth, we included a recipe for
maple icing in case you feel the *need* to ice these cookies.

*Penne with Fresh Tomatoes. For me, there is nothing better than a bowl of
pasta with fresh tomatoes. We celebrate summer with this easy-to-make pasta
dish.
