Thanks so much to everyone who added additional tips to helping breading stay
on foods.  Here are some of these helpful hints.

Besides using guar or Xanthan gum in the egg mix, others have gotten the
coating to stick with using a coating of sweet rice or glutinous rice, or
bean flour.

Another tip was to make it ahead and refrigerate it before cooking for an
hour to give the coating a time to set.

Others suggested using potato flakes, corn flakes, potato chips in GF flour

Spray whatever you want to bread with Pam  before applying it.  Try
mixing instant mashed potato flakes & cornmeal for a topping. Also mix
grated Parmesan cheese with Sauer's seasoning salt & Sauer's  Lemon
Pepper.  It's great on potato wedges baked in the oven
