Don,
        Last week-end I happened to go into a deli near my hourse in
South San Francisco. While there I happened to notice a sign stating that
they stocked the following special items and chestnut flour was one of
the things listed. I bought a 500 gram bag for $9. Not cheap. It says on
the label to use one part of the chestnut flour to 4 parts "regular"
flour. It is a product of Italy and is distributed by Chestnut Hill
Orchards, Inc, 3300 Bee Caves Road, Suite 650, Austin, Texas 78746. It
states that you can send a SASE for free recipes and it is laveled as
gluten free. I imagine that if I am able to find it in my little town,
you should be able to find it in a deli in New York City.
        By the way, I haven't tried it yet, but I hope to soon make one
of my favorite Christmas cookies using it. I keep it in the refrigerator
because they kept it refrigerated at the deli.
