I just spent the night at a stunning B&B in Saugerties, NY (near Woodstock) called Harmony House.
The owners are quite familiar with the gluten free diet! One of the owners is a pastry chef and wholistic health counselor and the other is a chiropractor. The decor is French-style, colonial with modern bathrooms. Each room has a veranda. 
They are very connected with the events and sights to see in the area.
