Hello all,
    I have been diagnosed for 6 years with Celiac Disease.  I have struggled
at times with the diet and at times I have no problem.  I am currently in the
middle of a huge problem.  I had a bunch of ladies coming to my house for my
Stampin' Up! party and I didn't plan ahead and leave myself time to bake
something gluten free.  So I thought I would just go to Wal-Mart and buy some
stuff that all of them could eat and I would be busy anyway and wouldn't
worry about the food.  Well, they ate over half of what I bought, but my
husband didn't like any of it and wouldn't eat it, and my son ate some of the
leftovers, but there was still quite a bit left sitting there and all it took
was a moment of weakness and that lemon bread was in my mouth, and then so
was the apple turnover and then I'm thinking to myself...  I've already blown
it so why not have some more while I'm on this binge.  I got stomach cramps
later that afternoon and felt weak and sick for most of the day Saturday.
But by Sunday morning I was actually feeling fine and believe it or not, I
ate some more thinking, Why not?  Ok, it's all out of my house now, but I'm a
little worried.  I have no idea what kind of damage I have really done and I
haven't been to a GI doctor since we moved here 4 years ago (haven't really
needed to... until now).  I didn't have a reaction to all the gluten that I
thought I would have - just cramps and gas - wow!  I thought I'd be on the
floor if I ever ate that much gluten!  Do any of you ever feel tempted like
this and actually follow through and eat gluten?  I know "out of sight, out
of mind" has worked for me well, in the past, but with it sitting right there
and no one to eat it...
Thanks for listening.  I guess I better start looking for a GI doctor in
Pensacola, Florida that knows something about Celiac Disease.
