In response to Ralph's question about eating gluten free in Japan:
When I went there two years ago I took my own little bottle of gf soy
sauce (tamari). I used it on my food in restaurants; my hostess in
the private home where I stayed used it in cooking. Most of the soy sauce
I saw available in Japan was Kikkoman, which has wheat in it. If there
were any gf brands, I didn't know because I couldn't read the labels.

I would be interested to hear other people's ideas, as I plan to go back.
