I have a somewhat similar problem, but not as severe as the one you describe.
Since going on a soy/gluten free diet I was able to identify corn as my
(other) problem.  As long as I stay away from corn I do not have any problems
with joint pain, as long as I avoid all three I feel pretty good.  :-)

You may want to experiment by eliminating other grains/products from your
diet.  Glutin is not the only possible culpret!
