Hello, everyone. I'm at a loss for what to do, so I thought I'd explain
my story to you all and see if anyone had any advice for me.

I am a 20-year-old student at Virginia Tech. I've been casein-free for
five years, gluten-free for almost a year, and soy-free for about four
months.

My reaction to milk is by far the worst, usually consisting of painful
diarrhea. My reaction to gluten and soy are much more mild (though
gluten is slightly more painful), consisting only of painful gas.

I have not been diagnosed with Celiac. The blood test came up negative,
but at the time I was gluten-free, so I understand that it's inconclusive.

Each time I've eliminated something from my diet, my symptoms have gone
away for a few weeks; but then they slowly come back and get worse and
worse until they're back to the painful gas and bloating.

When I went home for Thanksgiving, my symptoms mostly vanished for a few
days, I think. But it was only a week, and not enough time for me to be
sure.

What's different between home and school? Well, here, the school pays
someone to cook for me since I'm required to be on meal plan. He does a
really good job, and if he's ever in any doubt about an ingredient, he
looks it up and/or checks with me. He works in the vegetarian/vegan
section of the dining hall, so everything he cooks for me is mainly
veggies and rice in olive oil, though some mornings he also makes me
omelettes.

At first I doubted the rice that they were using (note: not all rice),
and I tried avoiding it, but it made no difference. So I told him I was
still getting sick and he did some research and came up with one
possibility.

All of the fruits and veggies they use are washed in this stuff called
Victory. Here's the MSDS on it, cached by google:

As you can see, it has acetic acid and some other kind of acid in it.
Aside from that, when not diluted properly, it causes stomach and throat
burns.

So. I guess I'm asking a couple questions:
1) Has anyone had any experience with this Victory stuff before?
2) Has anyone had my kind of problem before?
3) Is it possible that it's not Celiac, but something worse like Crohns?

I will summarize.

Thanks in advance!

Sincerely,
John Woods
