I am not a medical professional so this is not advise, just some
thoughts based on Mary Alice's experience.
1)  You may be experiencing reactions to something that you are
over-using in order to maintain a GF diet.  Mary Alice developed a
sensativity to soya six months to a year after she went gluten free--
she was using Adell Davis' "Pep-Up" drink and soya was a major
ingredient.
 - and/or -
2)  You may be suffering from some disease state that has nothing to do
with celiac and the GF diet -- a mild case of "stomach" or "summer" flu
can cause all the symptoms.

Just hang in there and don't give up on the diet.  It helps to remember
re: your symptoms that "This, too, shall pass."
