I just downloaded a receipe for Gluten-Free Petzel Rolls and one
of the ingredients is dough enhancer. The dough enhancer that my local
health food store has containes wheat gluten and malt.
        Is there such a thing as gluten free dough enhancers (other than
the viniger that Betty Haggman suggests)
