SillyYaks Recipe - GF Ice Cream Tacos (the "Choco Taco") shared by Melonie Katz (variation from a recipe found from an recipe e-newsletter for busy moms.)... and what moms aren't busy, right?

8 frozen round GF waffles, thawed
1 qt chocolate GF ice cream softened
1/2 C mini marshmallows
1/2 C hot fudge sauce
8 maraschino cherries

Warm waffles according to pkg directions; while they are still warm, gently fold each in half, like a taco shell. Place them in a 7 x 11" baking dish, squeezing them into 2 rows so that they retain their shape. In a large bowl, combine the ice cream and marshmallows until well mixed. Place 2 small scoops of the ice cream into each "taco shell". It works well to use one of those ice cream scoops that has a lever which pushes out the ice cream mixture.  Spoon fudge sauce over the ice cream and top each with a cherry. Cover and freeze until firm.  You can also try using the regular version of "Magic Shell" topping (which was GF as of last month), to create a "shell" coating on your Choco Taco instead of using the fudge sauce.
