In the early years of this listserv many people offered recipes for all purpose
GF flour mixes. The recipe I am contributing is one I have always found to be
the best for making gravies. I do not know the author.
4 Cups Brown Rice Flour
1 1/2 Cups Sweet Rice Flour
1 Cup Tapioca Stach Flour
1 Cup Rice Polish
1 Tablespoon Guar/Xanthum Gum
Whisk together all ingredients.
Note: Both Rice Polish and Brown Rice Flour can become rancid if not used
in a reasonable amount of time. For this reason, I keep this mix in the
freezer, taking out a small quantity for gravy use. Although this mix was
formulated for any baked goods, I just use it for making gravy and is, in my
opinion, perfect for this. I give it to family to use for my visits. I get
