Thanks to everyone for all the wonderful information!  Here it goes:

PF Changs on the strip - lots of positive feedback on this one and their
GF menu.

Buffets are all over and the chefs are generally knowledgeable and
helpful (especially at the nicer hotels) and will walk you through the
buffet and let you know what you can eat.

Whole Foods, Wild Oats and Better Nutrition have a variety of GF products
available, salad bars and even GF pizza at Wild Oats.

Il Fornai restaurant featuring GF pasta - call ahead to verify this.

Outback Steakhouse - multiple locations.

Big Dog's Cafe and Casino 6390 W. Sahara Ave.
