Just to correct one or two things in the recent postings about studies on the safety of Codex alimentarius wheatstarch for celiacs.  There have been at least four clinical studies (one them Australian) published in serious journals (Scandanavian Journal of Gastroenterology & Alimentary Pharmacology & Therapeutics), by eminent gastroenterologists such as Kaukinen and Maki, showing the safety of wheatstarch for diet-compliant celiacs. BTW postings referring to studies and research should contain the full journal references and links where possible.
Secondly to imply that this research is faulty because of possible support from Codex wheatstarch producers is at best naive, and at worst, defamatory.  As with any medical product it's up to the producer to prove its safety through clinical trials otherwise products like Viagra would never get licenced.  What gastroenterologists are interested in is the clinical improvement in their patients via dietary compliance that these products make possible. Hence these products are available on prescription in some European countries.
Incidentally it's the lack of any potential drug therapy for celiac disease that the drug industry could exploit that has meant that the condition has been largely ignored in North America and still has pitifully few interested clinicians.  As soon as the US food industry believes that it can make money out of wheatstarch you can bet your life there'll be plenty of "proper" all-American studies proving its safety!
