Restaurants in Massachusetts are now required to have someone on staff who
has had food allergen awareness training.  The training materials are
available free online.  These materials do a thorough job of discussing the
issues such as cross-contamination.  It is oriented towards all food
allergies, but also includes Celiac Disease.
