My significant other has Celiac and is worried that she might react to
"modified corn starch." She is not allergic to corn, but has had some
reactions to food containing "modified corn starch." There may have been
other sources of contamination, however, such as spices, etc. Anyhow, my
interest has been piqued, and I'm curious what it is that they do to corn
starch to make it "modified."
