You aren't eating as many calories now as you did when you ate wheat.
It's pretty basic: eat fewer calories than you need for metabolism,
and you are going to burn more fat than before, and potentially waste
some muscle tissue as well.

For what it's worth, I have the same problem as well: when I don't eat
processed foods, I need to eat tremendous quantities of unprocessed
foods to maintain my weight.  This takes a lot of time, and it's
tedious.

I'm going to guess that you have stopped eating some of your favorite
foods that were either oil or sugar-laden (e.g., donuts), and you just
haven't found any food substitutes that are as rich in calories.
Start eating some extra snack meals during the day, and keep
increasing the amounts of food eaten until you are able to maintain
your desired weight.
