Hi, All

In a recent posting I asked if anyone had a recipe for Indian pudding. I had heard that it only contained cornmeal, molasses and eggs, so I knew this would be gf. I received lots of responses, and opinions on what this tastes like. One person said it was the most vile connoction. Another said to top it with the finest vanilla ice cream you can find. (hmmmm, must be a reason for adding a topping like that.) I also had people tell me that it is commonly sold in the New England states, even canned. Seemed to be that you either loved it or hated it. 
Here is one of the recipes submitted:

INDIAN PUDDING

4 1/4 cups whole milk
1/2 cup cornmeal 
4 tablespoons butter
3 tablespoons molasses
2 tablespoons granulated sugar
1 teaspoon ground ginger
3/4 teaspoon salt
1 cup raisins (optional)

In large, heavy saucepan, blend milk and cornmeal. Cook over medium heat until mixture starts to bubble, stirring occasionally. Stir and boil for 3 minutes. Reduce heat to low, and cook for additional 15 minutes, stirring often. Remove from heat, and stir in butter, molasses, sugar, ginger, raisins and salt.

Butter an 8 to 9 inch casserole dish. Pour in cooked mixture. Bake in preheated 275 degree oven for 2 1/2 to 3 hours. A dark crust will form in the center, and the edge should be bubbling. Cool on rack for 30-60 minutes. Serve warm or at room temperature. Top with vanilla ice cream, if desired.
