Okay, so I experimented with making my daughter some gf matzo brie (yes it has leavening it the crackers but so what it's gf).  I used Schar crackers that I presoaked for a couple of minutes in water.  I used about 6 crackers or so.  You may have to experiment with how many to use.  I beat an egg to which I added a little onion powder and salt.  I mixed it up and fried it using a little Pam  cooking spray. You have to cook it for awhile so that it is not soggy and the outside it a toasty brown.  I thought it came out tasting better than the real matzo brie that my husband made.  Enjoy!
