Hi All,

At Christmas, a relative made a recipe that tasted pretty close to thin
mint cookies. I haven't tried it yet with a GF cracker but it should be
close. The Christmas recipe used a ritz cracker.

I have a Bi Aglut round ritz type cracker I'm going to try. Dip the
cracker in a mix of 1 1/2 pounds of chocolate chips, or any chocolate
you like plus 1/4 teaspoon mint flavoring, used for candy making.

I know it must be hard this time of year with all the cookies around at
home and at your office. When my then 17 month old was diagnosed, I
remember crying and saying "He'll never know what a girl scout cookie
tastes like." Then my 10 y.o. was diagnosed, and I remember thinking,
it's probably better not knowing!
