A recipe for cookies with oatmeal was just posted.  If you are like me and avoid oatmeal at all costs, the following is useful. Nick Malgieri, the master baker in the US and who has many fabulous cook books.  is very much aware of celiac problems.  He suggests sub. chopped walnuts, cup for cup for the oatmeal.  You don't need gums.  

Malgieri contributed a great recipe for cornbiscotti.  What he did was sub cornstarch for the wheat flour.  That is what Julia Child suggested...sub cornstarch cup for cup for cake or reg flour.  It works...been doing it for years and have even won awards!!
