Is she allergic to soy milk? If no, you can use one of the mix-it-from-a-can
varieties (they have more calcium than pre-mixed kinds, and a good amount of
fat) and use more than the regular amount of powder to make milk.

Then she'd get more protein and calcium. Check the container label for those
nutritional details.

Also, rice muffins/pancakes with amaranth flour are a good bet. Yum!
Amaranth is high in protein.
Carbohydrates are good!
