I got the best responses - all positive and informative in their own
special way...very inspiring.

Again, here are the messages and my comments are in brackets [ ].

P.S.  The Vegan Parmesan topping is from Soymage and according to their
website, it is definitely gluten-free and pretty "healthy" compared to
regular dairy Parmesan cheese (see below).  YEAH!

The ingredients are:  Soy beverage (filtered water, organic tofu), textured
vegetable protein, rice starch, unhydrogenated canola oil, sea salt, citric
acid, calcium phosphate, natural flavors, vitamin A palmitate, riboflavin.

A serving is 2 tablespoons and provides 15 calories (5 from fat), 10%
vitamin A and 4% calcium (if you follow the RDA info, which I personally do
not believe is accurate).

It is FREE of saturated fat, preservatives, casein, cholesterol, lactose,
and LOW in fat (depends on your definition, but regular Parmesan is 3.0
grams of fat per 2 tbsp versus 0.5 grams for this vegan parmesan).

I paid $2.59 plus tax (at Wild Oats)for 4 ounces.

[ Note from Linda: Yes, the Parmesan "cheese" is dairy free - most soy
cheeses have casein to help with meltability - they claim to be
lactose-free, but they are really not dairy-free. ]


 Thanks.  One more question, where do you buy or find this cheese.  I
don't think I have ever seen it.  Since I have trouble with dairy
products I would be interested in trying it.

Ok Ok  please pass on your vegan recipes if you will.  I was vegan for a
while and it was good.   Now I have been on a higher protein diet because of
malabsorption and low protein levels.  But, no reason a good vegan recipe
wouldn't hit the spot!

inter-library loan tons of veggie (convert to vegan if necessary) books and
find ones you like.  Also, join the veggie list - VegList is an excellent

<http://www.vrg.org> *and* <http://www.vegsource.com> are two good ones and
remember that most recipes are already almost vegan with just a few changes
here and there. ]

OK...you've convinced me...what's the recipe for gf chili? Also, what pizza
do you recommend that's also gf?

[Note from Linda: I love the Bette Hagman pizza crust in her first book -
it's called Yeast-Rising Thick...we make it with egg replacer, plop it out
on the parchment paper on two pizza pans, then spread it with wet hands (I
have a bowl of water!), then bake for 5 minutes, remove the paper (it
slides off), then add the toppings and finish it.  YUM! ]

You have really inspired me to try some of the vegan products again.  I had
tried a couple of the vegan cheeses and wasn't really thrilled with them,
but now I'm motivated.  I've been a vegetarian since 1991 and toyed with
veganism.  The more I read the more lately, the more I think I need to go
that way.  I don't partake of milk but occasionally cheese.  I'm now going
to try these Soymage products.  When you mentioned two different brands of
mozzarella, what kinds are you using?  Do you find that they melt okay?  I
have an easy "lasagna" recipe - use sliced zucchini in place of the noodles.
Cuts some of the carbs and is quite good.

On another note, some time ago you sent me some links to info to a inquiry I
had about osteoporosis and improving it with diet alone.  Although most
responses were from folks who were only able to improve with drugs (or maybe
that's the first thing their doctors gave them), I am ecstatic to say that
my density improved from osteoporosis to minimal osteopenia (in only two
small areas of the spine).  Needless to say, I was thrilled to prove the
doctor wrong that I would only improve with drugs.  And that was after only
one year GF.  I'm staying VEG!!!

the body's need for it ]
