Dear Friends,
I am so grateful for the 15 helpful replies I received .  It looks like mole in Mexico is probably best avoided.  According to my knowledgable respondents, the chocolate is often thickened with flour or bread when made into the sauce.  The chocolate itself is GF--it's what they add when they make mole. 
In addition, people let me know that there is lots of good fish, fruits, etc. but urged me to take care.
