Dear list:

Family Fun magazine's June/July issue had a recipe for ice cream sandwiches
which adapted to be GF, and it is great.  I am not a fan of having to use a
rolling pin, but this wasn't hard, and it was certainly worth the smiles on
my kids' faces:

1 stick margarine
1 cup brown sugar
2 eggs
1 t. vanilla extract
1/2 c. cocoa powder
2 c. GF flour mix
1 t. xanthan gum
1 t. baking powder
1/4 t. salt

half gallon vanilla ice cream (or lactose free equivalent)

1.  Cream together margarine and sugar.  Add eggs one at a time, blend well,
then add the vanilla.

2.  In another bowl, mix dry ingredients together.  Gradually add to wet
ingredients.  Gather dough together and chill for at least one hour.

3.  Preheat oven to 375.  Roll out dough on lightly floured surface to 1/4
inch thick.  Using a sharp knife (I used my pizza cutter), and (the recipe
says use a ruler, but I am not that concerned with precision at this time)
cut rectangular pieces; theirs were 2 1/4 by 5.  Mine were quite irregular,
but tasty just the same.

4.  Transfer the cookies to an ungreased cookie sheet, and use a fork to poke
the holes in the cookies.

5.  Bake for 8-10 minutes until set.  Cool on cooling rack.

6.  Meanwhile cut the ice cream.  If you buy it in a "brick" you can peel off
the paper and slice it to roughly the dimensions of your cookies.  Freeze the
ice cream slices until ready to use.

7.  Once the cookies have cooled, make your sandwiches.  Wrap them
individually in foil.  This makes 6 large sandwiches, but we made 10 medium
sandwiches and only used half the ice cream.  Also tastes great if you can't
wait for the cookie to cool completely and all the ice cream melts between
the cookies.
