I have believed that mono and diglycerides were made from wheat. What
other sources are there for this additive? I have stopped eating
anything with mono and diglycerides in the ingredients?

I have not found any instant mashed potatoes that do not contain them. This is
inconvenient because several recipes call for instant mashed potatoes.
I have to assume that there is a brand out there that is safe or Bette
Hagman would not list them as an ingredient. I must mention that I cannot eat
soy.

Also, I have been eating Veleeta occasionally without a problem, but
now I understand it does have gluten in it. Can anyone enlighten me?

I would also like to know about Carvel Soft Ice Cream and mono and
diglycerides. Does anyone know?
