I made the Yellow Velvet Cake (from a mix) from Gluten-Free Essentials.  I
am very impressed.  It is moist, tasty, and with a little cream cheese
frosting added to 2 round cakes layered, I have been in heaven (I believe
they were 8" round size; one mix also makes a 9 x 13-nice size).

 

I have no financial interest in the company.  I just wanted to share since I
thought it was so good.  They have several mixes that sound wonderful.  You
