The following email is from an employee at Disneyworld, so I would assume
it is accurate.  After that are emails from fellow listmates. Thanks for
all who responded!

"I am a culinarian at WDW. Generally all hot dogs are 100% beef and
gluten free.(Not the bun as you know) Fast food varies. Most locations
have french fries in dedicated fryers. They all have fresh fruit. and
some kind of salads. Special orders are not unusual. Burgers are 100%
beef, just ask for no bun. Alot have lettuce tomato onion bars.  However
the problem lies in cross contamination. They all wear gloves, but they
will touch your burger with the same tongs they just but a burger on a
bun with unless you make it clear that that cannot happen.  Did I make
that understandable? Shoot, one time a fas t food outlet came to our
restaurant to get some Rice Dream for guests at their fast food
restaurant. Also allow for extra time because they produce in bulk at
fast food outlets and they will take the extra time and attention to get
you what you need but it just may take a little longer.  Also getting
something from another location takes a lot of time so just be prepared.
Call WDW and ask to get the number of the chef at one of the parks or
the hotel where you are staying(if on property) and tell them about your
special dietary needs. People do it all the time. If you plan ahead it
is much easier. Sorry to go on so long but I a very pleased to be able
to provide great dining experiences for everyone regardless of what they
can or can't have."

I just went to Disney over Christmas break and had a very good time!  I had
the hot dog (all beef) and fries (they're not seasoned and GF).  Also had
frozen banana and popcorn.

Someone had called Disney and said that these
items were GF and I was fine.

when you are in the parks, the fast food counters keep a book that
shows pictures of each food item and lists the ingredients.  We would look
at the menu and decide on some items we thought might be gf, then ask to see
the book so we could check for certain.  We ate very well.

All the turkey legs, hot dogs and hamburgers in the parks are gf without
the rolls, of course.  In almost all the fast food restaurants the fries
are okay as well, just ask about cross-contamination.  If you're in
EPCOT, they have gf pizza at the MetLife exhibit.  You will need to ask,
but they should have it.  The popcorn is gf as is the slushies and most
of the ice cream (the Mickey shaped pops with vanilla ice cram and
chocolate are fine.)  If you get a chance go to Spoodles by the
Boardwalk hotel.  They usually have gf waffles and other foods readily a
vailable are very accomodating.

I understand that EVERY fast food place keeps a book with ingredient
listings.  I don't know this for sure as I haven't needed to check for it
myself, just I do know it was posted once on this list serve.  The hotdogs
should be just fine, as are the hamburgers w/o bun.  The roasted chicken in
Tomorrowland at the Magic Kingdom is okay.  French fries are okay if fried
in a dedicated fryer, so you have to check that.  There are some ice cream
snacks sold at carts that are fine, but I don't remember which ones beyond
the frozen bananas covered with chocolate/nuts.  The ice cream at stores
(hand-dipped and soft serve) is supposed to be okay. Try to pack a few
things yourself just in case, but I think you'll be fine.

FrontierLand sells roasted turkey legs "to go".  I have read on this list
that they are safe.
