Thank you to those who replied.. here are the responses I got:
1. On the reservation, the only restaurants are the Hyatt (it actually has several restaurants), The Prairie Star, and the Santa Ana casino.  There are also many restaurants in the nearby towns Bernalillo and Corrales and Rio Rancho.  I can tell you that there are many GF options at the Hyatt, they use very high quality ingredients and don't adulter their foods with grains.  It is very $$ though.  The kitchen will also bend over backwards for their guests.  The Prairie Star, is also nice and may work with you, but I can't vouch for the actual brain power of the people doing the cooking- that is where I have had the most problems myself. The casino is just the regular mass produced buffet stuff. If you are willing to drive about 20 miles south to Abq, there is a "restaurant row" where you can find Carrabas, Outback, and PF Changs, all of which have GF menus. 
2. The town of Bernalillo, right next door, has some restaurants. Nothing that is particularly gluten free though. I have eaten at Abuelitas (new mexican food) and didn't have a problem after asking the basic questions. I can't remember what I had though. Probably soft shell tacos.If you can, head down into Albuquerque, about 10 minutes down the highway and go to Paisano's for pizza and/or pasta. It's on Eubank. Yum! There's also a PF Chang's on the north side of town. I know of a couple more nicer restaurants in the Nob Hill/downtown area if you are interested in Albuquerque places. There is a Trader Joe's and Whole Foods on the north side of Albuquerque if you need snacks. I have heard that the cafe at The Merc shopping center in Placitas is allergy-friendly. Placitas is east of Santa Ana and Bernalillo - just on the other side of the highway and just up the hill on your left.
