My experience within 2 weeks of cutting out casein (I was already
GF) was an enormous increase in allergic and asthmatic symptoms.
I took this to mean that the neuro-receptors that had been
occupied by caso- and gliadomorphins for so long were suddenly free,
and sensitized to pretty much any protein chain that entered the
bloodstream. With time - and a very careful diet - that sensitivity
has gradually declined.
