Very interesting discussion.  I have been using this survival method for
years.  As I usually fly, I don't have the luxury of the extras one can
carry in a car.

Something I do that hasn't been mentioned yet is to prepare one dish meals
like casseroles, and put good sized portions in 'Decoseal' sealed bags.   I
heat these in a pot of boiling water.  It works for cooked rice and separate
portions of food as well.

In a rush, I have then used the boiling water for coffee.

Just be sure to carry scissors to open the bags and something to fish them
out of the hot water.  A pot holder is handy too and doesn't take up any
room.

Before one trip I was very short of preparation time so I just bagged what I
had in the frig which was a huge casserole.  I spent a week in Denver,
eating exactly the same dinner every night.  Dull and depressing, but I did
not have a gluten reaction.

I always carry enough food for the whole trip which is rarely more than a
week because the better the hotel is, the less likely it is to be anywhere
near a food store.  Again this is only a problem if you don't have a car
available.
