In Nicole Routhier's beautiful book, "Foods of Vietnam, there are great
recipes. However the one I thought needed mentioning is not GF: how to
make sweet rice wine. The starting ingredients are glutinous rice, yeast
ball ('men' is Asian name), all purpose flour (1 teaspoon), and sugar.

Sad news, sorry. I'm reconsidering using rice wine vinegar.
