made these last night - yum!
try serveing with guacamole and plain yogurt or sour cream
 
2 eggs
1 1/2 c milk
1 c brown rice flour
salt & pepper
1 large bunch leeks, remove green end and chop finely in food processor
 
mix batter and add leeks
fry in oil like pancakes (don't need to deep fry)
