I'm writing to see if anybody has faced a similar situation.  After learning
that it is a Federal law that a child, regardless of medical condition, must
be provided with lunch, we contacted out local food service department and
met with the food service director and the cooks at the elementary school.
After explaining celiac disease, we agreed that they would provide a
gluten-free lunch to our six-year old daughter once a week (i.e.,
hamburger/hot dog or pizza that we would provide).  The cooks seemed to be
very at ease and assured me that this would not be a problem.  The district
was providing separate pots, utensils and purchasing several substitute items
such as hot dog and rice.

Today, we received a call from the foodservice director who said the cooks
have stated that they would not do it and if they "are forced" to provide
lunch for our daughter, they will quit.  WE were shocked since their initial
response was completely positive.  Any suggestions/recommendations on how to
handle this matter will be greatly appreciated.
