NJC,
        As a vegetarian I have had it rougher than most in this area (even
fewer choices).  However, when I go out to eat mexican fast food I have
never had a bad experience asking them to substitute beans for the meat in
a taco.  (Just tell them you are alergic to it and they will not fuss in
the least) :¬)   Also, tostadas come on a corn tortilla and they are pretty
tasty as well.
        To help me with speeding up the cooking process I have purchased a
pressure cooker.  Cooking a pot of beans in 15 min. _definitely_ makes my
life easer.  Now I never have to waste my days off with cooking everything
in one day.  (You will find that meats (roasts, chickens, etc) are also
doable in a pressure cooker, and they come out very tender).
        As for the alternative "breads" and such, I would rather do without
as I hate the taste and texture.  I find that others react more to my
having to do without than I do.
