I am sorry it has taken me awhile to summarize all of your responses.  So many people responded I was a little overwhelmed (in a good way), so thank you very much for all of your great ideas. 
1. Pepperoni (Yes, we have done that in the past, but we are living temporarily in Canada and can't find Hormel anywhere.  There was a brand we found and used for Boy Scout trips, but I haven't been able to find it lately.
2. Canned/pouches of tuna and chicken
3. GoPicnic products were also a popular suggestion. www.gopicnic.com
4. Trailmix was suggested and has been a staple of mine.  I think was focusing too much on a protein source and forgot about my old favorites.
5. Fresh fruit, veggies and dip, dried fruit, fruit cup.
6. Chips, crackers, rice cakes, and cheese.  Thank you for reminding me Laughing Cow doesn't need refrigeration.
7. GF granola bars, protein bars
8. Sliced lunch meat that doesn't need refrigeration.
9. Pasta dishes that can be eaten cold by Allergaroo.
10. Nut butters (Peanut and nut free school, so this won't work for me, but still a good idea)
11. Canned beans and Vienna sausages, canned salmon and bean salad meals by St Dalfour, Dinty Moore
12. Candy bars and M&M's for dessert (My son thanks you for this reminder!)
13. Freeze dried meals. We have used these for camping with the scouts, but I don't think they will have access to boiling water during lunch.  Dinner yes, lunch no.
Again, thank you for your well wishes and concerns for his safety.  The school may not do such a great job working with special diets, but they do have a great outdoor education program and take all the necessary precautions. We are working on improving the food situation.  They had a bake sale today and my son brought GF cupcakes.  They sold out!  I think the school will have to see there is a demand.
