1.SPECIFIC CARBOHYRATE DIET-Alot of suggestions for the Book "Breaking the Vicious Cycle"-Specific Carbohydrate Diet.
For those of you who are having trouble with carbs and continues intestinal
problems even after going GF, here is a site that has helped my sister
immensely.  It deals with eliminating different grains from your diet as
well as
gluten.  I admit I dont really know much about it but seem to read here a
lot that
many people are still having trouble even when GF.

2.DIGESTIVE ENZYMES: I'd strongly recommend talking to your gi doc about getting some
digestive enzymes.  I had a similar problem.  When I ate sugar and fats
I felt terrible.  My gi doc, Dr. Peter Green - Celiac Research Center at
Columbia, prescribed Creon.  They are definitely digestive enzymes - I
believe pancreatic enzymes.  They work miracles for me!  I've been on
them for 9 months now.  I've tried weaning off them twice.  But, I found
I still needed them.  ---"I asked did they get help ger rid of alot of food allergies" 
----Response"I still have the same sensitivities, but I can tolerate a little cheating
here & there without severe reactions.  I can also tolerate butter every
morning with my breakfast now, whereas it used to give me a headache.  I
can say that a major improvement since being on the enzymes is that I
haven't developed any NEW food allergies since I cleaned up my diet &
began taking these enzymes!  For a couple of  years there, I was finding
a food allergy nearly every day!

3. LECTINS & PALEO DIET: I have a ton of food intolerances, too.  I'm wondering what yours are that 
make a meat and veggies diet difficult?  I have found that, for me, a Paleo 
Diet works best.  It eliminates most of the known toxic lectins in the food

Some of your symptoms sound like perhaps low-functioning adrenals, not 
enough protein in your diet (it sounds as if you are eating more protein 
and noticing improvements in just a short time), or maybe not enough fat in 
your diet.  If you go low carb, you have to get your energy from good 
fats.  Protein is good for growth and maintenance, and is not a good energy 
source.  In fact, too much protein without enough fat will make you very 
sick.  Native Americans had a name for it--something like rabbit sickness, 
from eating rabbits that had too little fat on them in late winter.  Just 
something to think about, not to get worried about.  Keep studying about 
diet and ask questions and juggle your diet around until you find the 
combination that fits you.  Your perfect diet probably will not be found in 
any book.  Listen to your body and believe what it tells you.

As to the dairy, it is possible that what your crave is the opioids in 
it.  When life is tough, bread and milk can put you right to sleep from the 
opioids in both of them.  They also both have those toxic lectins I 
mentioned above.  Maybe that info will help you write dairy out of your diet.

Ah, fruit.  At one time, I wished I could live on meat and fruit, but I 
notice that as my body balances out, I don't eat much fruit 
anymore.  Berries are supposed to be the best form of fruit--not too sweet 
and lots of good nutrients.

4.WHY STOMACH ACID IS GOOD FOR YOU-Book: 
Reese, We're twins.  I also have tons of food allergies.  I did an Atkins
style diet for a couple of years before I finally figured out that my
problem was celiac disease.  I got so much better GF, I started indulging
in GF sweets & treats.  Then I got sicker than ever with GI symptoms
similar to yours.  I finally got back on the low carb bandwagon & got
better again.  I've learned the following about how to treat these
symptoms:

(1) I got allergy tested by blood test -- what a big help this has been
to eliminate so many offenders that I didn't even know were offenders
(2) I've been doing B12 shots for 2 years
(3) I was put on stomach acid/digestive enzymes to enhanse digestion,
reduce bloating and improve absorption of iron, calcium, etc.  It also
helps with constipation and diarrhea.  (Thorne Bio-Gest)  It's the lack
of sufficient stomach acid & digestive enzymes that causes all the food
allergies & bloating.
(4) I use a supplement designed to support my adrenal glands which has
done wonders for reducing those unpleasant "hypoglycemic" type symptoms. 
This has really been a big help.
