I got an amazing response based on my questions looking for cookbooks that
are veggie friendly, and less heavy on the baked goods type stuff. Lots of
interesting and thoughtful responses. Thank you all so very much.

There is a gluten free cookbook called "125 Best Recipes" which has lots of

I bought it at Borders Book store and really like the book.  It is all
gluten free.

I just had a cookbook published that totally fits the description of what
you're looking for - fresh simple ingredients, fast and easy to make while
still being interesting and healthy and delicious... there's one bread
chapter but the majority of the book is not bread-oriented.
It's called Eating Gluten Free by Shreve Stockton.

I would recommend a few books by Mollie Katzen. Her cookbooks are
vegetarian but not GF. Her book "Vegetable Heaven" is really great andnot
heavy on baked goods at all. She does incorporate many ethnicflavors and
techniques, but her style seems mainly "California fresh".Her dishes are
definitely creative and have that gourmet edge, but are usually quite
simple to prepare. She has soups, appetizers, mains, sides, and just a few
desserts, I believe.

Have you ever looked at the 1,400 recipes in the 725+ pages of Vegetarian
Cooking for Everyone by Deborah Madison? How about any of the Moosewood
Restaurant cookbooks?

Howdy ,My favorite vegie mostly gluten free cook book is Real Vegetarian
Thai by Nancie McDermtt.It's dead on authentic and thai food is almost
gluten free anyway.The ingredients are readily available at whole foods and
even giant has thai rice noodles these days

Quick Cuisine by Ann Clark - --This is by far the cookbook that I have had
consistantly wonderful results from.  Not all vegetarian, but I usally go
for the veggie or chicken recipes and they're always great.

I am really enjoying Simply Thai Cooking by Wandee Young and Byron
Ayanoglu, published by Robert Rose, Inc. 1995.  (telephone order number 416
499-8412, fax 416 499-8313).  I have also seen a Volume 2 which has 16 new
recipes.

Look see if your local library has the book, "Vegetables, Amaranth to
Zucchini".

The first vegetarian cookbooks that came to mind are Madhur Jaffrey's World
of the East Vegetarian Cooking and Sundays at Moosewood by The Moosewood
Collective.  I also love Laurel's Kitchen, especially the original which is
now out of print, but the New Laurel's Kitchen is good too.  I also enjoy
the Moosewood Collective New Classics.

Take a look at Cooking Gluten Free by Karen Robertson
I really like Betty Crocker's Vegetarian cookbook.  It contains a variety
of simple dinner recipes.

"Great Taste Low Fat Meatless Main Dishes" by Time-Life Books.
80 recipes, filling, vegetarian, many ethnicities to try.  There are a
few that include some sort of bread, usually as a side dish (like flour
tortilla wraps, for example).  There is a barley soup, and sometimes they
use couscous as a base, but you can easily substitute rice.

So it is not specifically a gluten-free cookbook, but I have used these
recipes many times since my son went GF.
