I am a freelance writer and have recently become aware of the challenges
that face those with Celiac as they travel.  On a Web site dedicated to
Disney restaurants and menus, I read some postings from travelers who said
they had wonderful experiences dining everywhere in the Disney resorts.
Apparently, the chefs and staff there are trained and understand dietary
needs, contamination issues, and the need for careful preparation.  I would
like to write a story for a Disney travel magazine on this topic.
Unfortunately, I am unable to contact those individuals for interviews, but
I'm hopeful that some list members here might be willing to tell me their
stories and allow me to interview them at greater length should I land the
assignment.  I appreciate your assistance.
