 You would be amazed at the things you can do with tofu to replace things
you miss, like yogurt, sour cream, creams in soups and sauces, and more.
Experiment.  There are also Tofu cookbooks out there.  I have even
substituted diced, browned tofu for meat in Chinese style dishes.  It
especially substitutes for chicken well.


The only fat/GF diet would be eggs whites.  There is a very minamal amount of
fat in lettuce.  Most fruits and veggies are GF and low in fat w/o the
obvious Avacados.  There is angle food cake and most grains can be made into
cookies, etc with subbing bananas or prunes for the fat and a lots of egg
whites.

I'm pretty sure most GF pastas are fat free.  I know
that Tinkyada pastas are made of nothing but rice and
water.  Some companies like Kraft (which promise to
disclose any gluten) may have some fat free products
(like dressings) that might suit your friend as well.

For desserts, try some of the pure fruit sorbets: Haagen Dasz, etc.
Also, some of the frozen fruit bars. Also for a sweet treat try
meringues by Miss Meringue check out the site at www.missmeringue.com to
check pure status, ingredients look okay. She could also make her own
meringues. Also, they should be fine with most jams and jellies, check
ingredients.

I'm thinking they should be fine with rice cooked in GF broth and
veggies, or mashed potatoes made with skim milk or GF broth. Nonfat
tomato sauces with GF pasta, pickled veggies, beans cooked in water or
broth. Good luck with the protein sources, most contain at least some
fat, except for fat free dairy products.

Perhaps she means low fat, and not fat free? Everybody needs some fat,
particularly from the cold water fishes (omega-3 fatty acids). Fruits and
veggies and lean meats all fit the bill.
