I'm new to this group although I'm not new to gluten intolerance having
been diagnosed with it some 6 or 7 years ago.  I'm particularly interested
in this distilled vinegar question.  When I first discovered I was gluten
intolerant, I joined a celiac group which had researched the distilled
vinegar question.  Their report was that distilled vinegar was a grain
product and, as a grain product, it was best to abstain from using it.
In addition, they advised that most cider vinegars are also made from
distilled grain vinegar with a little cider tossed in for flavor and
color.  So substituting commercial cider vinegar for distilled grain
vinegar does NOT suffice.  Consequently, I have been making my own
apple cider vinegar for the last six years.
