Hello List Mates,
I didn't know that Halibut had cheeks, but apparently they do. And they're naturally gluten-free. Chef Matt Israel modified his signature dish for us: Halibut Cheeks with Warm Red Skin Potato-Scallion Pesto-Crab Hash with WHole Grain Mustard-Caper Butter Sauce.
GF company good, beautiful too. And not as complicated as it sounds - according to Chef Matt.
The recipe is too long to print here, and I've learned that the fractions don't translate. but it's on my site today.
