Tapioca Bread with Cheese (Pco de Queijo)

2/3 cup vegetable oil
2 cups milk
4 cups tapioca flour
2 eggs, beaten
1 1/2 cups grated Parmesan cheese

Combine the oil and milk in a pan and bring to a boil. Put the tapioca
flour in a bowl, add the boiling mixture and mix well with a wooden
spoon. Add the beaten eggs and mix well. Add the Parmesan cheese and mix
well again. Let the mixture stand for 10 minutes. Put a little oil on
each of your palms and make small balls, 2 inches in diameter, (make
sure when  forming the balls that your hands are always lightly oiled).
Place on a buttered baking sheet and bake in a 350 degree oven for about
20 minutes or until the top is light brown.Makes 30 small cheese breads.
