Thanks to all who responded to my request for a substitute for Guar and
Xanthum gum.  I received quite a few suggestions for substitutes and
suppliers.

Sweet Rice
Knox gelatin(double the amount i.e. if 1 teasp of gum use 2 of gelatin)
Applesauce
Pureed pears
Extra egg or egg whites
Mung bean flour

Enger-G Foods www.ener-g.com was also suggested as a supplier.

Dianne even offered to send me some guar gum.  Thanks so much Dianne,
will try the other suggestions first.

Here is a suggestion for a flour mix 6 parts brown rice flour, 2 parts
potato starch, 1 part tapioca starch and 1 part sweet rice flour.  The sweet
rice flour takes the place of guar or xanthum gum.
