Summary of Williamsburg VA restaurants:

I received three responses to my inquiry. (Thanks to all who responded!) 

One person, who lives an hour away from Williamsburg, said that whenever they go to Williamsburg, they eat at The Bray Bistro at Kingsmill. "The chef fully understands celiac and food allergies and will make up a dish specially for you if nothing on the menu takes your fancy."

Another person could not recall the name of the restaurant but indicated that "it was something like The Captains Steakhouse ..." This person also stated that their server knew of celiac disease. 

Finally, the last recommendation is received was for a seafood restaurant near Busch Gardens called The Whaling Company.  "As you might guess, it serves mostly seafood and does not have a gluten free menu per se (at least they didn't when we were there), but our server was knowledgeable about all the dishes on the menu and was more than willing to ask the chef questions and pass along our requests.  it was a very enjoyable meal."
