I ordered several of the gluten free cookbooks on the list I sent you thru inter-library loan.  I wanted to warn you about one of them.  Fabulous & Flourless: 150 Wheatless and Dairy-free Desserts by Mary Wachtel Mauksch.  On page xx she states that spelt flour is okay to use with caution for those with a gluten allergy.  Just know that spelt flour is not gluten free and not okay to use.
