Just found out that Hertel's Meats on Vancouver Island make a wide variety of gf sausages.  All the nitrate free varieties of Hertel's bacon are also gf.  Several of their hams (if not all) are gf.

If you go to their website you can access a Meat Product Sheet.  almost all products on page 3 are GF.

This company is very aware of the needs of celiacs and happy to give out info.

Hertel's is in Port Alberni and Victoria.  All contact info is on their website  -  www.hertelmeats.com
