This would probably be good like you said for accidental ingestion if you have a reaction from eating something at a restaurant.  But gluten intollerance and celiac disease are two different things. 
 
gluten intolerant people just get a bad reaction when they eat something that contains gluten.  Like lactose intolerant people.  Gluten Intolerant people do not have an auto immune disease and therefore it does not deteriorate the villi.  If they contained the gene for Celiac Disease they may adventually get it but in itself it is not the same.  This is perfect for those people who want to eat gluten but they have a reaction.  This will help subside the ill effects.  However, for people with celiac disease, and adhering to a gluten free diet.  I can only see it beneficial for an occasional accidental digestion because Celiacs should never go back to consuming gluten intentionally.
