Many thanks to all of the sane souls who piped up with advice about
contacting the catering manager for the conference.  I did just that this
evening upon arrival ... and to my delight - he knew what CD was!  Phew!
So, after a five minute review of the basic menu plan for the week, we were
through.  It's a relief, to be honest.  I hadn't even thought about worrying
about it because I thought it had all been prearranged... so to discover so
shortly prior to the trip that it wasn't was a bit of a bummer and tail
spin.

Thank you all for your wonderful advice... don't know where my brain was..
but certainly glad you all had yours!  ; )
